- The Costa Rica Convention Center hosted a landmark event for the future of Costa Rican gastronomy.
- As part of the tenth anniversary of the National Plan for Sustainable and Healthy Costa Rican Gastronomy (PNGCSS), an update to this strategic plan was announced, adapting it to the new realities of the country’s gastronomic sector and agri-food systems.

Since its launch in 2014, the PNGCSS has been a key reference for institutions, organizations, professionals, and businesses in the sector, promoting principles of sustainability, health, and equity in agri-food systems.
During its first decade, more than 65 entities have formally committed as adherents, actively participating in the implementation and promotion of the plan’s 12 strategic pillars, making an impact across all dimensions.
However, global and national changes—including climate change, evolving lifestyle trends, growing knowledge of ancestral gastronomy, innovation with identity, cultural and migratory influences, and technological advancements—necessitate a thorough review of the PNGCSS.
The Costa Rican Gastronomy Foundation (FUCOGA) has been leading efforts to coordinate and promote initiatives aligned with the PNGCSS’s objectives. Today, in partnership with Fundecooperación for Sustainable Development, FUCOGA has signed an alliance to drive the plan’s update, with the Costa Rican Tourism Board (ICT) participating as an Honorary Witness.
A Milestone for Costa Rican Gastronomy
Alfredo Echeverría, President of the Costa Rican Gastronomy Foundation, emphasized the significance of this new phase:
“This marks a turning point in the evolution of this initiative. Our goal is to directly influence agri-food systems—not only to contribute to climate change mitigation but also to establish a regenerative gastronomy that positively impacts both society and the environment.”
For her part, Marianella Feoli, Executive Director of Fundecooperación for Sustainable Development, highlighted the plan’s alignment with national realities and its contribution to sustainable development:
“Updating the PNGCSS is a decisive step toward strengthening the productive sector and improving the quality of life for Costa Ricans. We are pleased to be part of this alliance, which fosters the growth of the gastronomic sector with a sustainable approach.”
Additionally, Ireth Rodríguez, Head of the Vacation Segment at the Costa Rican Tourism Board (ICT), reaffirmed the tourism sector’s commitment to this initiative:
“The ICT has supported this plan since its inception and has integrated it into national and international promotional strategies. Its modernization in the face of future challenges is crucial. Gastronomy is one of the main travel motivators for tourists, and strengthening it contributes to differentiation, positioning, and competitiveness in our key markets.”
New Adherents Strengthen the Initiative
During the event, 11 new adherents—including representatives from civil society, the private sector, and local governments—officially joined the initiative, reinforcing the national and inclusive nature of this update.
Finally, Alfredo Echeverría emphasized the holistic vision of gastronomy in Costa Rica’s development:
“Gastronomy must be seen beyond just the plate. It is not merely a sensory experience but a cross-cutting pillar in Costa Rican life, encompassing economic, environmental, social, and health aspects. We must recognize its role in nutrition and societal well-being.”
With this commitment, the PNGCSS update will initiate a national consultation process in 2025, paving the way for a shared vision that will guide Costa Rica’s gastronomic development over the next decade.
